 Ingredients:

  • 1.5 lbs fresh cod fillets (about 4 pieces)

  • 4 cups water or fish stock

  • 1 tsp salt (for water)

  • 3 tbsp unsalted butter

  • 4 cloves garlic, minced

  • Juice of ½ lemon

  • Zest of ½ lemon (optional)

  • 1 tbsp chopped fresh parsley (optional)

  • Salt & pepper, to taste

  • Optional: pinch of red pepper flakes for heat


Instructions:

  1. Prepare the Cod:

    • Pat cod fillets dry and season both sides lightly with salt and pepper.

  2. Boil the Cod:

    • In a large saucepan, bring 4 cups of water (or fish stock) and 1 tsp of salt to a gentle boil.

    • Carefully lower the cod fillets into the simmering water.

    • Reduce heat to medium-low and simmer for 6–8 minutes, or until the cod is opaque and flakes easily with a fork.

    • Use a slotted spatula to gently remove cod from the water and set aside.

  3. Make the Garlic Butter Sauce:

    • In a small skillet or saucepan, melt butter over medium heat.

    • Add minced garlic and sauté for 1–2 minutes until fragrant but not browned.

    • Stir in lemon juice (and zest if using).
