 Slow-cooked chicken Cacciatore

 Ingredients:

  •  10 peeled chicken thighs, about 5 ounces each, trimmed
  • kosher salt and freshly ground black pepper
  • cooking spray or extra virgin olive oil
  • 5 cloves of garlic , finely chopped or crushed
  • 1/2 rhubarb onion , finely chopped
  • 1 28 oz canned crushed tomatoes
  • 1/2 medium green pepper, finely chopped
  • 1/2 medium red bell pepper , finely chopped
  • 8 oz. shiitake mushrooms, sliced

 Instructions

  1.  Season the chicken with salt and pepper. Heat a large non-stick pan at medium or high temperature. Coat with cooking spray or olive oil and add the chicken. Cook until browned, about 3-4 minutes on each side. Transfer to a slow cooker.
  2. Reduce heat under the pan to moderate and apply more cooking spray or another drop of olive oil. Add the garlic and onion and cook until soft, about 3-4 minutes, stirring occasionally. Transfer to a slow cooker.
  3. In a slow cooker, add the tomatoes, bell peppers, mushrooms, thyme and bay leaves. Stir to mix.
  4. Cover and cook for 4 hours on high heat or 8 hours on low heat.
  5. Discard the bay leaves and transfer the chicken to a large plate or cutting board. Pull the chicken out of the bone (discard the bone), shred the meat and put it back in the sauce. Stir in the parsley. Serve with pasta, polenta or pasta pumpkin with parmesan cheese.
