This slow cooker of white chicken chili with sweet potatoes is a simple gu and whole30 meal on any night of the week! Nice to pack lunches in advance.

Ingredients 

  • 1.5 lbs. organic boneless chicken breast
  • 1 large white or Japanese sweet potato peeled, cut into 3/4-inch pieces, about 3 cups*
  • 2 cups homemade bone broth or sugar-free broth/broth
  • 4 ounces of green peppers that can be cut into cubes
  • 1 tablespoon chopped fresh jalapeno pepper
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1/8 teaspoon chili pepper depends more or less on your spice preference
  • 1 small yellow onion diced
  • 4 cloves garlic finely chopped
  • 1 teaspoon dried parsley or 1 tablespoon freshly chopped
  • 1 tablespoon organic ghee clarifies butter
  • 1/2 cup coconut cream**
  • 1 tablespoon fresh lime juice
  • 2 tablespoons nutritional yeast - optional

 

Directions

  1. place the chicken in a slow cooker and top with sweet potato chunks, broth, green peppers, jalapeña, onions and garlic, salt, and all spices (now you'll omit the last 4 ingredients) and cook for 3-4 hours or 6-7 hours low. I use a programmable slow cooker, which makes the timing very convenient!
  2. once cooked, place the chicken on a large plate and set aside. in a slow cooker, add ghee, coconut cream, lime juice, and nutritional yeast and stir well.
  3. cover and cook for 20 minutes on high heat.
  4. in the meantime, chop the chicken with two forks, then put it back in a slow cooker after 20 minutes and continue to cook on high heat for 10 minutes.
  5. serve with avocados, extra coriander, or chives. enjoy!

 

Recipe notes

  • *if you can't find white sweet potatoes, a regular orange potato will do, just cut into 1-inch pieces because they are softer.
  • **coconut cream is the solid part of a jar of frozen coconut milk. you can buy full coconut milk with only the thick portion, or just buy a jar of coconut milk.
